With 200, 330, 550, and 750 L bowl capacities, Nowicki KN-200V, KN-330V, KN-550V, and KN-750V industrial bowl cutters are designed to produce a variety of raw and (with an optional cooking feature) steamed meat emulsions and meat stuffing products — including crumbles and fine-grain fat emulsions — even from raw skins.
The vacuum feature of these bowl cutters maximizes output product quality with exceptional protein digestion and meat binding as well as longer shelf life and color retention thanks to reduced oxidation.
INDUSTRIAL VACUUM BUTCHERY CUTTER ADVANCED CONTROLS
Nowicki industrial vacuum butchery cutters feature microprocessor-based controls to command high-speed knife-head cutting rotations as well as mixing rotations with 40 preprogrammed routines.
High-quality sausages and other homogenized meats can be made in the butchery cutters, with maximum repeatability for consistency of the end product. The mixing of additional sausage ingredients is also possible.
Software monitors machine operation, conducts automatic diagnostic routines, and sounds signals to communicate the machine state to operators. A built-in operator panel is configurable and lets operators change the interface language. Automation of a raw materials unloader and a water dosage system completes the design.
INDUSTRIAL BUTCHERY CUTTER VACUUM DETAILS
The vacuum system on Nowicki KN-200V, KN-330V, KN-550V, and KN-750V industrial butchery cutters is designed to let end users produce a wide array of meat products. The application (and re-gassing release) of the vacuum environment is quick. A cutting fineness of 40% to 90% is possible when the bowl is rendered in a vacuum environment. Increased content density under vacuum conditions allows the cutterhead to achieve especially fine crumbles. Emulsions are also more homogeneous and stable, with minimal foaming for a firmer and more flavorful end product.

Nowicki KN-60, KN-90, and KN-125 butchery cutters include an array of design features for high performance and ease of use, including:
