A key step in bacon manufacturing is brining and injection to add flavor inside and out. Water, salt, sugar, and other spices and flavorings are added to raw pork bellies to give bacon that unmistakable and irresistible flavor people crave. The proper measurement of ingredients in the brining and injection process is critical; too much or too little of any one ingredient can lead to consistency and quality issues, and even regulatory challenges. Equally important is brine temperature, as well as the pressure at which ingredients are injected. After proper brining and injection, bacon is ready for curing and cooking.
