Nowicki TO series dripping tunnels serve two functions after meat has been injected with brine. They:
- Separate excess brine from the injected elements
- Seal visible needle holes on the meat surface
The latter function is especially important for skinned poultry products as well as skin-on poultry cuts — on which injector holes can be quite noticeable.
Injected product is turned while it moves forward through the dripping tunnel to let excess brine drain off. At the same time, the agitation causes visible needle holes to be concealed.
TO-1 and TO-2 dripping tunnels can also be used to continuously separate free brine from injected pieces of meat to be smoked.
